I Made It Because I Like The Word Schnitzel

I wrote about this recipe in my post last week about the tomato farm we delivered to.  Their company website had some pretty delicious dishes.

I really loved the chicken, although I don't feel that the addition of feta was flavorful enough, believe it or not.  I guess it was the same as tossing grated parmesan into the breadcrumbs, but since the feta crumbles were a little bigger, each bite was noticeable.  I loved the fresh thyme taste too.

The tomato chutney was good too, but a little too sweet.  If I make it again, I'll reduce the amount of sugar and the amount of vinegar.  While it was boiling down, the vinegar made the truck smell like an old shoe.  Otherwise, it was pretty delish.  And we have enough chutney to last us two weeks.

I can't make a chicken cutlet that perfect-looking in a non-moving, spacious kitchen.
