Over Fifty Years In The Making

A delicious Sopapilla (one of Ed's favorite desserts) from El Nopalito Cafe in Las Cruces, New Mexico, a local restaurant that's been around since 1964.

We found this place via  The food was good and the dessert was light and airy with just the slightest drizzle of honey to sweeten.  It hit the spot.

We were on vacation in Albuquerque a few years ago with my wife's parents and had these. My father in law is not that adventurous food wise, but I thought "Yay! I've got him eating Mexican food" And he had some of my tequila-result!
