Apple Crisp And Friends

This week we had another opportunity to meet up with our friends who'll we'll be doing our next two loads with - Washington, DC to Florida, then a short jaunt from one location in Georgia to another.

We met up Wednesday afternoon in Baltimore and then headed down to Washington, DC to spend the night in the marshalling yard - the area where they were staging trucks for the pickups from the convention center downtown.

MacGyver showed up hungry, asking for "appeteasers", so I threw together a plate of cherry tomatoes, green olives, rolled ham, provolone cheese, green grapes, and toasted rye bread points. When I asked him what he wanted to drink, he said "The usual." I knew that meant a fizzy SodaStream beverage. His favorite is Pink Grapefruit. He likes it on the rocks.

Later, I cooked dinner in the truck for the four of us. I made Chicken Marsala (here's my recipe from an older post), Carrots sautéed in butter and herbs, and Long Grain & Wild Rice. Sorry there are no photos, we were too busy eating.

And because the weather was so perfectly cooperative by providing me with temperatures in the very low sixties, I made this beautiful Whole Wheat Apple Crisp, which I topped with a scoop of Talenti Tahitian Vanilla Bean Gelato. The perfect October dessert.


This morning I threw together a few quick breakfast sandwiches - fried eggs with Havarti Cheese and thinly shaved Honey Ham, on a toasted Whole Wheat English Muffin. And coffee, of course.  In my truck we serve illy, brewed and espresso.

Saturday for lunch we'll be having Marinated London Broil steak sandwiches served on crusty Italian bread topped with peppers, onions, mushrooms, and provolone cheese. And Sunday dinner will be Broiled Flounder with butter and breadcrumbs, served with a side of Roasted Rosemary Fingerling Potatoes (these cute little baby potatoes come in different colors!) and 
sautéed Green Beans.  I haven't decided on a dessert yet.

And some people say trucking sucks.

I have no idea what they're talking about.
