Of course, she made it with fresh spinach from her garden and I used frozen, but it was still deeeeelicious!
Then I threw in the chicken pieces and allowed everything to simmer together until the sauce reduced to a thick, buttery, sherry infused deliciousness.I hate clean-up, whether home or in the truck, but at least at home I have a dishwasher! I'd be happy to cook every day, for one to twenty people, as long as I don't have to clean up. Unfortunately, I don't have room for a maid in the truck. Damn!

i agree with gil....looks delicious!!...and actually the mess doesn't look too bad...i was wondering how to apply for the maid's job????....lol.....i am gonna have to try this....haven't had creamed spinach in forever!
